Compliance with the hygiene, in particular, not exceeding the levels of contaminants and residues of substances harmful to health in primary agricultural production is a condition of food safety for human health. The main research question of this book is whether, and if so, to what extent, legal regulations in various countries regarding especially agricultural practices in agricultural production allow for human health to be protected against unsafe food of agricultural origin in the light of legal safety criteria, such as microbiological criteria and residues of pharmacologically active substances. The first part of the book includes considerations on detailed regulations in force in the EU and selected EU Member States (Poland, Spain, Slovakia and Italy). The authors research the EU hygiene regulations (Regulation (EC) No. 852/2004 and Regulation (EC) No. 853/2004), pesticide residues, pollutants, microorganisms or substances, residues of pharmacologically active substances, as well as radioactive contamination, and official controls provisions (Regulation (EU) 2017/625, Regulation (EU) 2019/624 and Regulation (EU) 2019/628). The second part of the book analyses national provisions of selected third cuntries – Brasil and Urugway – as well as the Mercosur provisions, WTO Agreement on Sanitary and Phytosanitary Measures and Agreement on Technical Barriers to Trade.
